Zuppa Toscana Recipe – Toscana Soup
Toscana Soup My Most Requested Recipe
Everybody has that one recipe that their family is always requesting. For me, it’s my Toscana Soup. Everybody loves this comforting loaded soup and nobody can get enough of it. You can change up the recipe a bit and make it more your own. For us, we double the Kale. And sometimes get a little heavy-handed with the bacon. But this is how I make it when I share it. Ingredients For Toscana Soup
- 1 Pound Mild Italian Sausage
- 1/2 white onion diced
- 12 oz package of bacon
- One pound small red potatoes
- 32 oz chicken broth
- 2 cups water
- 1/4 pound Kale removed from stalk and shredded
- half pint heavy cream
- 2 cups milk
- 1 Tbsp parsley
- Salt and Pepper to taste

How To Prepare Zuppa Toscana – Toscana Soup
Remove the casings from sausages and crumble and fry over medium heat. Drain and set aside.
While the sausage is cooking place a package of bacon on baking sheets and put in the oven at 400 degrees for eight to ten minutes. Once done. Drain – let it cool – chop it up and set aside.
Add one tablespoon of butter to a large cooking pot and add onion. Simmer on low until browned. Remove and set aside.
In the same pot add your chicken broth and water and bring to a boil.
Slice one pound of small red potatoes about a half an inch thick. For the wider pieces, I also cut them in half. Add to the boiling water and cook seven minutes.

Once the potatoes are soft, reduce your heat to medium. Add sausage, bacon, onions, half and half, and milk. Stir and cook for about seven minutes more.

Remove the stalks from your kale and tear it up a bit. Rinse well then add to soup.
Cook on high for five more minutes. then turn to low and allow to simmer for ten more minutes.

Serve with garlic bread and salad.
We like to serve Tiramisu as the perfect dessert with this one.
